Vegan Wednesday! Vegan Comfort Food!


Sometimes all you need to feel better is some good old fashioned comfort food. Lately I've been enjoying reading vintage cookbooks, and trying to "veganize" those old-time favorites. What better comfort food is there than a casserole? Not only are they easy to make, but they are tasty. PLUS, you can spread them out over several meals and really get your money's worth!

A favorite of mine recently is Tater Tot Casserole. Usually this dish is very un-vegan friendly. But thanks to Nacho Mom's Vegan Queso, it's easy peasy to make vegan!

Vegan Tater Tot Casserole
1 Jar of Nacho Mom's Ultimate Vegan Queso (or Fire Roasted)
1/2 cup to 1 cup frozen veggies (I like corn, carrots and peas)
32 oz. bag of frozen tater tots
4 oz. vegan burger crumbles (if desired!)

Preheat oven to 350 degrees.

Pour sauce into 13X9" baking dish, stir in crumbles and frozen veggies until mixed and everything is covered with sauce. Spread evenly on bottom of pan. Spread tater tots on top of mixture and even them out.

Bake 30 to 40 minutes, or until tater tots are golden brown.

Serves about 8...or stretches for several days/meals.

There are so many ways you can vary this recipe! Add Daiya shredded cheese for added cheesiness. Add Jalapenos for extra spice! Top with french fried onions for added crunch....the opportunities are endless!
