Vegan Wednesday! 30 Minute Vegan Meals!

Ravin' Ramen Noodle Soup
(Makes 2 large bowls or 4 small bowls)

6 cups water
4 oz. rice stick or bean thread noodles
1/4 cup soy sauce
1 tbsp. dried parsley
2 tsp. onion powder
2 tbsp. dehydrated onion
1/2 teaspoon garlic powder

1. Bring the water to a boil in a medium size pot. Add the noodles and boil for 3 to 4 minutes, or until the noodles soften.
2. Add the soy sauce, parsley, onion powder, dehydrated onion, and garlic powder. Stir, let all of the ingredients sit together on the stove for at least 5 minutes, and serve.

Skip the sugar...

We have lots of customers heading in asking for low-carb and sugar-free options. While we have a section devoted to low-sugar or sugar-free items, there still are not a lot of ready-to eat-options available that meet our standards. We do not carry any products with aspartame or acesulfame potassium in them. Many commercial "sugar-free" products are laced with these ingredients that may actually do more harm to a person's health than sugar.

There are a lot of healthy, natural options. Xyltiol, agave nectar and stevia provide natural alternatives for sweetening beverages and in recipes. We have several new books in the store that are chock full of low-sugar recipes, including "Quick Cooking for Diabetics," "Diabetes Snacks, Treats and Easy Eats," and "Quick & Easy Low-Sugar Recipes" and our favorite," Ani's Raw Food Desserts."

To get you started, here is a sugar free option for chocolate chip cookies that uses xylitol:

Chocolate Chip Cookies

Ingredients:

1/4 cup unsalted butter, softened
3/4 cup xylitol
2 TBSP unsweetened applesauce
1 egg
1 tsp vanilla extract
1 cup plus 2 TBSP spelt flour or whole wheat pastry flour
1/2 tsp baking soda
1/4 tsp salt
4 ounces maltitol sweetened dark chocolate bars, chopped

Directions:

In large bowl, cream butter with xylitol until fluffy. Gradually add applesauce during creaming process. Beat in egg and vanilla extract. In another bowl, combine flour, baking soda and salt. Gradually stir flour mixture into batter, and fold in chocolate. Drop 1/2 TBSP of dough for each cookie onto a parchment-lined cookie sheet. Bake at 350 degrees for 10-12 minutes or until light golden brown. Cookies are soft when taken from the oven, but become firm when stored overnight.
Yield: 3 1/2 dozen cookies.
Per cookie: Calories: 41.8 Carbs: 6.7g Fiber: 0.5g Fat: 2.2g Sodium; 33.5g Net Carbs: 1.8g

Is Ketchup Gluten Free?

I noticed that we had gotten in a new brand of Gluten Free Ketchup and it got me to thinking, "Isn't ALL ketchup gluten free??". Well, actually, no. It's not. It has to do with the distillation process of the vinegar used. White vinegar can be derived from wheat, corn, barley, rye and spelt. "But, if the vinegar is distilled most of the gluten particles should be left behind in the process. The problem is that some particles of gluten could be transported over in the distillation process and contaminate the ketchup. Thus, causing what is called cross contamination".

Vegan Wednesday! Vegan Lunch Box!

It's that time of year where everyone is going BACK TO SCHOOL! Jennifer McCann's website has some awesome ideas for vegan lunch boxes. These fun and delicious recipes are also great for adults! Check out her blog!

Here is a great recipe for wholegrain VEGAN sushi rolls:

makes 4 rolls, to serve 2

¾ cup shortgrain brown rice
1/8 cup millet
1/8 cup amaranth
1 teaspoon fresh lemon zest
1/8 cup sunflower seeds
4 sushi nori sheets (sheets of dry, toasted nori seaweed)
Avocado slices or other filling of your choice

Put the rice, millet, and amaranth into a medium pot and add 1 ½ cups water. Bring to a boil, reduce the heat to low and cook, covered, for 35 minutes. Remove pan from heat and let sit, still covered for another 10 minutes.

Transfer the rice mixture to a large mixing bowl. Stir in the lemon zest and sunflower seeds with a wooden rice paddle or spoon, tossing the rice with light strokes to aerate and help cool the rice. Set the rice mixture aside to cool completely.

When the rice is cool, spread ¼ of the mixture on a sheet of nori laid out on a sushi rolling mat (keep a small bowl of fresh water handy to dip your fingers and keep the rice from sticking). Leave a 1-inch strip at the top of the nori sheet uncovered. Arrange the avocado or other filling down the center of the rice. Use your fingers to lightly moisten the top strip of nori with a dab of water, then use the rolling mat to roll your sushi up and seal it shut.

Transfer the roll to a cutting board and cut into 6 pieces with a sharp knife, wiping the knife with a damp cloth between cuts.

Vegan Wednesday! Burnin' Butt Burritos!

Burnin' Butt Burritos! (adapted from the recipe in the "How It All Vegan" cookbook)

2 red peppers, sliced and seeds removed
3 jalapenos, sliced and seeds removed
2 cups, cooked rice
1 or 2 cans of refried beans
1 package soy vegan cheese (optional)
2 garlic cloves, diced
1 small onion, diced
1 tbsp. cooking oil (I used olive oil)
4 tortillas (I prefer whole wheat)
Salsa or guacamole (optional)

Preheat oven to 350 degrees. Saute peppers, jalapenos, garlic and onion in oil until onions become translucent. Cook rice as needed. Lay out tortillas and fill with toppings, roll up and lay on ungreased cookie sheet. Bake for 15-20 minutes (depends on how crispy you want the tortillas). Makes about 4 burritos. (We actually had plenty for leftovers and were able to make a few meals out of this...which is always nice!)

Top with salsa or guacamole. You can vary the filling that you want, or add less or more peppers to spice it up or tame it a bit. These are delicious and easy! I highly recommend them!

Sunburn Relief!
Though summer is coming to a close, there are still many of us using our last free moments to hit the lakes, and that means baking and burning under the sun in the process. Olive oil is a natural way to soothe and repair sun damaged skin because of its wonderful healing properties (We recommend an Organic variety such as "Field Day Organic Extra Virgin Olive Oil") . Try adding a cup to your bath water and soak for 30 minutes. This allows the olive oil to penetrate deep into the skins pores and work more effectively. Pat dry with a soft towel to avoid aggravating any soreness from sun damage.

Be a Softy...
When it comes to your skin, that is! Olive oil has natural properties that moisturize and soften the skin. Apply to areas of dry skin and it can definitely help relieve any dryness or flakiness you might be experiencing. Treat yourself to a mini-manicure by soaking fingers for 30 minutes to soften cuticles until they are supple enough to safely push away from the nail bed. Or apply a thick layer to your heels to repair those cracks that lotions just can't handle. Even massaging a generous amount in hair, and leaving in for 30-60 minutes, can greatly help in alleviating itchy scalp, dandruff, and split ends.

Treat yourself to a spa night every once in awhile with this one, simple ingredient (Men, don't forget to try these out, too!). You deserve some TLC! And your body will appreciate it!

Vegan Wednesday! Reboot Your Life!

After watching the documentary Fat, Sick and Nearly Dead that follows Australian businessman Joe Cross as he does a 60 day juice fast and travels around the U.S. talking to Americans about how they eat, I was inspired. Joe's journey was very inspirational, as was the plight of trucker Phil, who was 430 lbs. and suffering from an auto-immune disorder that was very uncomfortable (he had the disorder in common with director Joe Cross). I figured, if a 430 lb. trucker can do it for 60 days with amazing results, surely my husband and I can handle 10 days! So starts our journey on the reboot cleanse.

Days one and two were probably the hardest. We fought a lot of rumbling tummies and headaches. Not to mention total lack of energy. By the middle of day two we decided to incorporate actually eating some raw fruits and veggies, and not just juicing. Was this cheating? I'm not sure, but I do know we still saw results and definitely felt the detox symptoms that you would just doing juice. Thanks to my working at Food For Thought, I am blessed to be surrounded by lots of delicious ORGANIC and LOCAL produce all the time.

Days two and on were not very rough, save for some minor hunger pangs which were quickly quelled by drinking lots of water or juice with greens. I started to feel some of the detox symptoms including flu-like symptoms and my skin breaking out. My husbands stomach wasn't always agreeing with him, but we soldiered on.
We didn't last our full ten days, towards the end of day 7, I had just had enough. I felt good in some ways, but my detox symptoms were making it difficult to keep up with work and what not. We decided that we had given it a strong enough try, especially for our first time. 7 days isn't too shabby as far as I'm concerned.

I detoxed my body, and lost 12 lbs. in the process. My husband lost 7 lbs., which is especially impressive because he's naturally pretty slim.

Neither of us regret a thing. It was a great learning experience, and a good jump start for further attempts at healthier eating. It's a struggle everyday to avoid eating so much processed foods, and avoiding snacking on sugary sweets. You just have to take it one step at a time. Don't beat yourself up if you make a mistake, dust yourself off and try again the next day. Or even the next hour. One hiccup doesn't have to mean you have to keep paying for it.

The temperatures here in Wichita have been in the 100s and for me, that's just about unbearable! Because of these outrageous temps, I've been craving COLD foods. Here is a great recipe for a delicious summer salad that will help keep you cool while everything else is sizzling!

Avocado Grapefruit Salad

Ingredients:
½ avocado
1 small or ½ medium sized grapefruit
2 tbsp scallions, chopped
¼ cup cucumber, cut into fourths and then chopped
1 tsp toasted sesame seeds
juice of 1 lemon
2 tsp organic soy sauce
black pepper to taste

Peel and cut avocado into ½ inch pieces.
Peel grapefruit and use only the flesh without the thin white skin in between the fleshy parts and cut or tear into pieces.
Combine avocado, grapefruit, scallions, and cucumber together carefully, add sesame seeds, lemon juice, soy sauce, and black pepper.

Vegan Wednesday! Vegan Seitan Buffalo Hot Wings!

Easy Peasy Seitain Hot Wings!

olive oil
1 pound seitan, torn or cut into chunks
1/4 cup hot sauce
3 tbsp maple syrup
1/4 cup lime juice
1/2 tsp salt
2 tbsp chopped fresh oregano (optional)

Heat a thin layer of olive oil in a skillet over medium-high heat. Saute the seitan until lightly browned, stirring frequently.

Add the hot sauce, maple syrup, lime juice and salt. Reduce heat to medium-low and allow to simmer for 3 to 5 minutes.

Remove from heat and stir in the fresh oregano.

Serve with Organicville Non-dairy Ranch dressing. YUM!!

VEGAN POTATO SALAD

2 LBS. Yukon Gold potatoes, chopped
1 medium yellow onion, chopped
3 stalks celery, chopped
1 cup vegan mayo (My favorite is always Vegenaise)
2 tablespoons of spicy mustard
1 tbsp. red wine vinegar
1/3 block firm tofu (optional)
1 tsp. sea salt
1/4 tsp. black pepper

Boil chopped potatoes for 20 minutes or until soft.
Let potatoes cool to room temperature.
Mix all ingredients well.
Refrigerate for at least 4 hours prior to serving.

Herbed Grilled Corn on the Cob

1 cup vegan margarine, softened
salt and pepper to taste
1 tbsp dried parsley
1 tbsp chopped fresh basil
1 tbsp chopped fresh chives
3 cloves garlic, minced and crushed
6 ears corn, husks removed

Combine the margarine, salt and pepper, parsley, basil, chives and garlic until well mixed. Refrigerate for at least two hours to allow the flavors to mingle.
Spread the margarine generously over each ear of corn.
Wrap in aluminum foil and grill for 15 to 20 minutes, turning frequently or until done.

The summer months are always filled with pool parties, outdoor sporting events, and lots and lots of BBQs! As a vegan, it's always a bit challenging finding a dish to bring that is vegan and universally appetizing (even to those die-hard meat eaters!). I've scoured the internet to find some great vegan friendly side dishes that are sure to please even the most stubborn meat and potatoes BBQ guests.

Easy Avocado-Lime Black Bean Salad from Oh She Glows blog

Ingredients

Two 15-ounce can black beans
1 lime, juiced
1/2 cup fresh cilantro leaves, chopped
2 small shallots, diced
1/2 tbsp olive oil
3/4 teaspoon ground cumin
1/4-1/2 tsp Kosher Salt, to taste
Freshly ground black pepper, to taste
1 large avocado, chopped into 1/2 inch pieces

Directions: Drain the beans thoroughly and rinse. In a large bowl add the beans and toss with lime juice, cilantro leaves, diced shallot, and ground cumin. Season to taste with salt and black pepper. Peel and slice an avocado, and serve the beans at room temperature, with chopped avocado on top or mixed throughout the salad. Note that I did not have any cilantro on hand, but it still tasted delicious! Makes 3-4 servings.

Ingredients

3/4 cup frozen shelled edamame, thawed
3 tablespoons water
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon hot pepper sauce
1 garlic clove, halved
1 Roma tomato, diced

Combine all ingredients except for the tomato in a food processor until smooth. Add the diced tomato and stir gently. Cover and chill.

Why we don't carry conventional produce

Food for Thought carries ONLY certified organic produce and locally grown, pesticide & chemical free fruits and veggies, a decision made based on our commitment to the highest standards.    Many of our customers have decided to switch to organic produce for a variety of reasons. Some choose organic due to their efforts to reduce exposure harmful chemicals in their diets. Others prefer the taste and increased nutrient content that organic produce provides.   Others have compromised immune systems and wish to avoid any synthetic chemicals on their food.

At times, organic does cost more. Organic farming is labor intensive and production levels are less than conventional produce. Sometimes, organic produce does not look as pretty as conventional.   Certain varieties of produce are not available year-round. Conventional produce would allow us to charge less and offer more variety. However, we'd rather make a few less dollars to provide our customers with products that are not saturated with potentially toxic chemicals or being produced using Genetically Modified Organisms.

We have found many consumers assume ALL natural foods store carry only organic produce. Many of the countries largest chains carry both.   We recognize there are standards in place to help reduce contamination of organic foods by conventional produce, but we feel it is too easy for cross-contamination to occur.   There is no way to guarantee that a conventional product doesn't co-mingle with organic. Some might argue that the chance for any chemical transfer is minimal. We'd rather not risk ANY contamination, especially as research continues to indicate the negative health impacts of various pesticides and herbicides.

We also champion local products. We do carry local produce that has not been grown with any chemicals or pesticides. As the summer season arrives, we hope to have more and more local produce overflowing on our shelves!

Here is a recipe for a delicious vegan blueberry-banana bread from Fat Free Vegan Kitchen's blog. Yum!

3 large over-ripe bananas
2 tablespoons lemon juice
1/3 cup (80 ml) vanilla soymilk (or apple sauce)
1/2 cup (120 ml) agave nectar
2 cups (240 g) white whole wheat flour (or regular whole wheat flour)
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (240 ml) blueberries

Preheat oven to 350F. Spray or wipe a 9×5-inch loaf pan with oil

Mix the soymilk with 1 tablespoon of the lemon juice and let stand until it curdles.

In a large bowl, mash the bananas and add the remaining lemon juice, soymilk, and agave nectar. Stir well to combine. In a separate bowl, combine the flour, baking powder, soda, and salt. Add the dry ingredients to the banana mixture, and stir just until the mixture is well-combined. Fold in the blueberries.

Spread the mixture evenly in the prepared pan and bake until a knife inserted in the center comes out clean, about 50-60 minutes. Allow to cool before cutting and serving.

Servings: 12

Vegan Wednesday! Vegan Smoothies!

Here are a few tried and true vegan smoothie recipes.

Green Goddess Smoothie
1 cup non-dairy Milk
1 peeled Orange
2 c. Kale or Spinach
1 peeled Banana
1 Pear, cut into quarters
1 c. Grapes, red or green

Blend all ingredients until smooth. Makes 5 cups.

Protein Powerhouse smoothie

1/2 cup almond milk

1-1 1/2 cup papaya slices

1 cup strawberries

1/2 of an avocado

1/3 cup silken tofu

2 tbsp of peanut or any nut butter

maple syrup/agave nectar/sweetener of your choice (to taste)

Blend until smooth.

Banana Carob Yum Smoothie

3 frozen chopped bananas

3/4 cup soy/rice/almond milk (your choice)

1 1/2 tbsp. carob powder

1 tbsp. agave nectar

1/2 tsp. vanilla extract

Blend until smooth.
