Manic Monday Recipe: Bean & Cheese Casserole

The weekend is over and it's back to reality! Each Monday we will post an easy recipe, either for the crockpot, quick fix or five ingredient or less recipe. Here's to eating healthy, simply!

Bean & Cheese Casserole
Ingredients:
5-6 small potatoes, sliced
1 tbsp mustard
1-15oz can Field Day Baked Beans 1 tsp black pepper
2 cups vegan cheese (we like Follow Your Heart's)
Directions:
1.  Preheat oven to 400. 
2.  In a large pot of water, boil the sliced potatoes until they can be pierced easily with a fork. 
3.  Meanwhile, in a small bowl, stir together the mustard, beans and pepper.  Set aside.
4.  Drain the potatoes and place half of them in a lightly oiled casserole dish.  Layer half of the bean mixture on top, then half of "cheese."  Repeat.  Cover and bake for 35-40 minutes.

Manic Monday Recipe: Seitan Saute

The weekend is over and it's back to reality! Each Monday we will post an easy recipe, either for the crockpot, quick fix or five ingredient or less recipe. Here's to eating healthy, simply!


Seitan Saute with Bell Peppers
Ingredients:
2 tablespoons olive oil
1 large onion, chopped
3 medium green or red bell peppers, diced
1-11/2 lbs seitan, 1/4 cup of liquid reserved, cut into bite-size chunks
Soy sauce or teriyaki sauce to taste
Directions: 
1.  Heat the oil in a large skillet or stir-fry pan.  Add the onions and saute over medium heat until golden.
2.  Add the bell peppers and seitan and saute over medium-high heat, stirring frequently, until the peppers are tender-crisp and the seitan chunks are touched by golden-brown spots.  Season to taste with soy sauce and pepper and serve.
(This would be great over rice)

Manic Monday Meal

The weekend is over and it's back to reality! Each Monday we will post a five ingredient or less recipe to help you eat healthy, simply!
Here's this week recipe:
Simply Asia Broccoli and Tofu
Ingredients:
2 large broccoli crowns, cut into bite-size florets
1 lb firm or extra-firm tofu, well drained, and diced
1 package your favorite Simply Asia Sauce
Your farvorite rice, prepared
Directions: 
Steam the broccoli in stir-fry pan with about 1/2" of water, until tender-crisp.  Gently stir in the tofu and sauce.  Cook over medium heat until heated through.  Serve over rice.

Manic Monday Meal

The weekend is over and it's back to reality! Each Monday we will post a five ingredient or less recipe to help you eat healthy, simply!


Here's this week's recipe:
Fettuccine w/Yellow Squash
Ingredients:
1-12 oz. package fettuccine
2 tablespoons extra-virgin olive oil
2 medium yellow  squashes, halved lengthwise and sliced
1 pint cherry tomatoes, halved
1/2 cup grated fresh Parmesan cheese or Parmesan-style soy cheese
Directions:
1.  Cook the pasta according to package directions and drain.
2.  Meanwhile, heat the oil in a skillet.  Add the squash and saute over medium heat, stirring often, until tender-crisp.  Add the tomatoes and continue to cook until they are just heated through.
3.  Combine the pasta with the squash mixture in a serving contianer.  Add the Parmesan cheese and toss together.  If a little more moisture is needed, add a small amount of water and toss again.  Season with salt and pepper, and serve.

Manic Monday Meals

The weekend is over and it's back to reality! Each Monday we will post a four ingredient or less recipe to help you eat healthy, simply!

Honey Mustard Chicken
Ingredients:
8 chicken thighs
4 Tbsp. wholegrain mustard
4 Tbsp. honey
salt and pepper to taste
Directions:
1.  Preheat the oven to 375.  Put the chicken thighs in a roasting pan in a single layer.
2.  Mix together the mustard and honey, season with salt and black pepper to taste and brush the mixture all over the chicken thighs.
3.  Cook for 25-30 minutes, brushing the chicken with the pan juices occasionally, until cooked through.  (To check the chicken is cooked through, skewer it with a sharp knife;  the juices should run clear.)
