Manic Monday Recipe: Bean & Cheese Casserole

The weekend is over and it's back to reality! Each Monday we will post an easy recipe, either for the crockpot, quick fix or five ingredient or less recipe. Here's to eating healthy, simply!

Bean & Cheese Casserole
5-6 small potatoes, sliced
1 tbsp mustard
1-15oz can Field Day Baked Beans 1 tsp black pepper
2 cups vegan cheese (we like Follow Your Heart's)
1.  Preheat oven to 400. 
2.  In a large pot of water, boil the sliced potatoes until they can be pierced easily with a fork. 
3.  Meanwhile, in a small bowl, stir together the mustard, beans and pepper.  Set aside.
4.  Drain the potatoes and place half of them in a lightly oiled casserole dish.  Layer half of the bean mixture on top, then half of "cheese."  Repeat.  Cover and bake for 35-40 minutes.
