Vegan Wednesday! Mock Tuna Salad!

Vegan Garbanzo Bean "Tuna" Salad

1 (19 ounce) can garbanzo beans (chickpeas), drained and mashed
2 tablespoons mayonnaise (I used Vegenaise)
2 teaspoons spicy brown mustard
1 tablespoon sweet pickle relish (I used Woodstock Farms Spicy Chipotle relish)
2 green onions, chopped
1 Cup Chopped celery
salt and pepper to taste

In a medium bowl, combine garbanzo beans, mayonnaise, mustard, relish, chopped green onions, salt and pepper. Mix well. Serve chilled on toasted whole wheat bread (or any bread of choice!). Also delicious all by itself!
