Manic Monday Meals

The weekend is over and it's back to reality! Each Monday we will post a four ingredients or less recipe to help you eat healthy, simply!
This week's recipe:
Soy Sauce & Star Anise Chicken
4 skinless chicken breast fillets
2 whole star anise
2 tbsp soy sauce
3 tbsp olive oil
(black pepper to taste)
1)  Put the chicken breast fillets in a shallow non-metallic dish and add the star anise. 
2)  In a small bowl, whisk together the oil and soy sauce and season with black pepper to make a marinade.
3)  Pour the marinade over the chicken and stir to coat each breast fillet all over.  Cover the dish with clear wrap and chill for up to 8 hours. 
4)  Prepare a grill (We like to use our Foreman during the winter).  Remove the chicken breasts from the marinade and cook for 8-10 minutes on each side, spooning over the marinade from time to time until the chicken is cooked through.  Serve immediately.
