Manic Monday Meals

The weekend is over and it's back to reality! Each Monday we will post a four ingredient or less recipe to help you eat healthy, simply!

Honey Mustard Chicken
8 chicken thighs
4 Tbsp. wholegrain mustard
4 Tbsp. honey
salt and pepper to taste
1.  Preheat the oven to 375.  Put the chicken thighs in a roasting pan in a single layer.
2.  Mix together the mustard and honey, season with salt and black pepper to taste and brush the mixture all over the chicken thighs.
3.  Cook for 25-30 minutes, brushing the chicken with the pan juices occasionally, until cooked through.  (To check the chicken is cooked through, skewer it with a sharp knife;  the juices should run clear.)
